02 33 25 73 40 a propos ouverture pain bio farine bio événements galerie moulin laboratoire fournil pains céréel a propos a bivilliers, des meuniers font vivre le depuis 400 ans. liés par l’amité et une passion commune, philippe gallioz et jean larrivière perpétuent cette tradition. avec la volonté de transformer leur farine en pain, les artisans meuniers ont construit un fournil. leur souhait est de retrouver les qualités nutritives et gustatives d’un pain d’autrefois. naturel – les farines sont fabriquées dans notre moulin artisanal. nous utilisons des céréales cultivées dans notre région. la mouture à la meule de pierre préserve les vitamines, les fibres et les nutriments du grain. – nos farines biologiques sont sans rajout de gluten, d’additifs et autres produits. savoureux – la longue fermentation de la pâte élaborée avec notre levain développe de nombreux arômes. – une eau de source ajoutée au sel de guérande, estampillé « nature et progrès », contribue au bon goût du pain. de bonne conservation – le levain ralentit le rassissement de la mie. – la cuisson au four à bois en “chaleur descendante” limite le dessèchement du pain. © photographies : nicolas verrier - www.nicohomestudio.com
